I like turtles. My friend thought I should put that in here. Random fun fact for the day, I guess. I’m not sure I actually agree with that statement… I mean, I guess I like turtles, but I’m not sure they’re worthy….These creatures on the other hand
-are totally worth it. The top one is the Czechoslovakian Wolfdog, the second is a regular tiger and the third is a white tiger. Three of my all time favorite animals.
Anyway, this blog isn’t supposed to be about animals…it’s supposed to be about food…so here it is. One morning, I needed something filling, but not greasy or too heavy. This was what I came up with:
a gourmet breakfast burrito of sorts. I think the only reason it’s really a burrito is because it’s wrapped in a tortilla…Other than that there isn’t much on this that’s burrito-ish. The avocado, maybe. But, regardless, it really hit the spot.
- 1 flour tortilla
- 3-4 slices of turkey
- cream cheese
- 1/4 c already cooked rice
- 2 eggs, mixed together
- shredded cheese
- 1 1/2 avocados
- garlic powder
- cayenne pepper
First off, scramble the eggs in a frying pan, adding the rice and however much cheese you want when the eggs are done and mix it all together until the cheese is melty and the rice is heated (if you pulled it out of the fridge). When that’s done, cream cheese a tortilla and place the lunch meat on top and then put the egg mixture on that. While that’s cooling off a tiny bit, go ahead and mash the avocado in a bowl, but leave it slightly chunky. Add salt, pepper, garlic powder and cayenne pepper to taste and then layer that on top of the egg mixture, roll the tortilla up et voila! Gourmet breakfast burrito a la mode! Actually, I’m not sure what that means…I just know they apply it to food things all the time, so I figured, why not? This is super simple and all up to taste and how much you feel you can eat. It is pretty filling, so don’t be worried if you can’t eat your next meal on time…or ever.
